The FCA popped up on my feed late last year. I made the recipe as written and loved it, now have a membership and have completed most of the courses. My cooking has improved quite a bit and I have enjoyed the courses so much! Stephane is great. My favorite part about this is it being all online, I can learn it at my own pace. The recipes are delicious and well thought out. The Sauces are my favorite recipes, so good!

I have been following Stephane & Kate’s cooking videos since they were on YouTube years ago. The French Cooking Academy is something I highly recommend because it is full of excellent tutorials on how to cook and make delicious, uncomplicated recipes. Stephane explains everything so thoroughly. I often follow along using his videos, pausing while I make my own dish and then watching more of the video. No recipe is too difficult even if you are a beginner. They are perfect for beginners. They add new content frequently, there is a great social Chat community if you like that, and Stephane is very available if you have questions about the process or recipes or just if you want to make a comment. It is a lovely community of people and I love making the recipes. You will not run out of things to make and you will not be bored.
Stéphane is superb in his knowledge and the generosity with which he shares it. In particular, I have to say how much I love his cold-start method for roasting a whole chicken. It's so easy and gives perfect results every time. We eat a fair amount of chicken and are super busy, so I can prep the chicken, put it in the oven, and do other things while the bird roasts. It holds beautifully when resting after roasting. And then after the first dinner we have delicious leftover chicken for X meals going forward: not dried out, not tasteless, just great. Try Stéphane's method (recipe is on his website) and you'll love it. Bravo and thank you for changing this experienced cook's chicken-roasting game, Stéphane.

I joined French cooking Academy during Covid as I needed something to do and decided why not learn to cook French food. When I first joined one signed up for various courses and now you pay annual fees and get access to all the courses which is probably a lot better. I have systematically gone through a lot of the courses and find the recipes incredibly useful and as you can see a number of years later I’m still a member. I therefore highly recommend French cooking Academy to get to grips with French cooking in a very concise easy and fun way. They are constantly adding new courses so they keep things fresh and with new things to learn all the time. To make things additionally easy not only do you get the steps on exactly how to prepare the recipe but you also get a step by step video. Stephane is ther star of the FCA and for good reason. 5 stars.

I have been a student of the French Cooking Academy (FCA) since March 2020, beginning with individual course purchases and then subscribing as a member as soon as that option became available.
Throughout my gastronomic journey, the FCA has exponentially advanced my cooking skills, knowledge, and confidence! Each course, and the sections within each course, provide detailed yet approachable training. The instructor, Stephan, introduces students to French cooking concepts, ingredient handling, plating, and most importantly techniques. As the great chef Jaques Pepin has said, “… the most important class you can take is technique. A great chef (read cook) is first a great technician.” Technique is the foundation upon which culinary success is built. And the FCA helps to build that foundation.
The learning model is self-paced and flexible to meet your busy schedule. Lessons include a little history (where appropriate) and theory, but mostly technique and demonstration. These are accompanied by detailed recipe cards to be used for practical exercise.
Stephan is very responsive to inquiries and always delighted to answer your questions. While always encouraging students to share pictures of their creations and details of their cooking experiences, you are never pressured to do so. And the student community is amazing in their encouragement and constructive feedback.
Beyond the incredible course content, the photography, video, and audio are of outstanding quality. The editing is superb. Each lesson is not too long, not too short. It is Kate, I believe, who is the mastermind behind the scenes – and what an exceptional job she does.
As an active FCA member, your courses, once completed, are available for review or re-taking, as often as you wish. And the curriculum is ever expanding. New and exciting options are added periodically, often after input solicited directly from the students.
I cannot more earnestly recommend the French Cooking Academy as the premiere resource for learning French cooking. In fact, even if you have gourmet interests outside cuisine française, this course remains a necessary foundational experience to help you develop and advance your culinary skills and the oh so important techniques of cooking.

My exposure to the French Cooking Academy started with YouTube, where Stephane posts a wide variety of "how-to" video recipes. After many successes with them, I realized I wanted to learn more than simply to mimic his instruction. I wanted to understand the bases of French cooking methodology. The cooking school lessons are produced the same as in the YouTube videos, but focus on the basic principles of French cooking. I appreciate the explanations as to why things are done a certain way, and consequences if they are not. They are quick, to the point, and very clearly presented. Video quality matches lesson clarity, and lets me see details--of browning, of textures, etc.--that I'm trying to do at home. This is a professional grade course for anyone who wants to understand the very essence of French cooking.

I have cooked for more than 55 years ( beginning by watching the Galloping Gormet after school) and have never found a more helpful program EVER! Stephane and Kate have developed a program that is so practical and easy to understand that the mysteries of French cuisine is laid bare. By following the recipies and the accompaning videos to walk you through the process anyone can put an incredible and elegant meal on the table with ease. I always saved my French recipies for weekend cooking as the old processes seemed to take forever to do. Stephane explained that by creating a mise en plas for each recipe and following the steps to create the meal that the flow of the process is really made simple. I now know now how a typical French homemaker can create amazing meals in short timeframes and do it daily. We now eat better by using the all natural ingredients and are inspired to make these meals our regular fare. It has even inspired us to grow our own herbs and even some of our vegtables for daily use. Rather than going out 3 to 4 nights a week, it's now maybe once or twice a week. Eating at home and having great food daily is such a joy. Thank you Stephane and Kate. We couldn't be more excited to see what's next!

I absolutely love the French Cooking Academy coursework and recipes. The community is fantastic. I love to cook and in 2023 when I went to France I fell in love with French cooking. FCA breaks everything down into simple recipes with complex flavors that are the heart of French cooking. Also, Stephane is very interactive in the community. So, if there's ever a question that someone has he is quick to respond so learning is readily available. If there's only one course that you can take on French cooking this has to be the best.

I have been cooking for many years but have learnt a lot from the courses. The instructions are clear and Stephane's demonstrations are interesting and delivered in a clear step by step approach. The style is about learning together and sharing our experiences. The recipes are tested and accurate. There are a lot of rubbish online courses but these are good supported by an enjoyable online community of people interested in food. Great value for money too.

The sauce course has taken ages to complete, due to other things. It’s one of the best courses here, however they are all bloody good. Just need to make often, or I’ll just do it again and again. The more you cook the better you get. Many tanks stephane
