The amuse-bouche had such a repulsive fishy smell that I wanted to spit it out, but I forced myself to swallow it. The food was so salty and greasy that it didn't suit my palate at all. When I bit into the pork jowl, the saltiness and the greasy fat were so overwhelming that I couldn't stand it and had to spit it out this time.
I felt so bad that I just walked out without eating the rest of the meal. The wine pairing was tasteless, and they only poured a tiny sip, which was very disappointing. Our table waiter didn't pay any attention to us, even though all the other staff members were very kind.
The food was very good but the service was off. They brought the amuse bouche before they brought us the menu. They were too slow and unorganized and the waiters appeared to be a bit nervous. They would bring the dishes without explanation and you could tell the waiters didn’t care about us, no engagement or conversation. It wasn’t until I told them we were in a rush that they actually brought the dishes on time. This is not the type of service I would expect from a Michelin establishment.
As I said, the food was good. We enjoyed every dish particularly the peas and squid, the white garlic soup and the fish was phenomenal. If only they improved their service quality!
Saddle was a true culinary delight with its inventive, fresh and tasty food that captured the culture of Spanish cuisine.
This was met with an incredible staff who took care to tailor the experience to our food preferences.
I’d recommend this place to anyone and will go back next time I’m in Madrid.
