My family has taken the Market class twice and loved it. we learned so much about buying seasonal food and then we had the opportunity to cook food we normally wouldn't have tried. This past time Chef Antonin made choosing our meal so easy and he made evryone feel confident and accomplished. I HIGH:Y recommend and of the classes at the school.

In October I was delighted to enjoy a unique Paris experience with 'Cook 'n With Class'. For a very fun and full 5 days of cooking, eating, and drinking amidst conviviality with an excellent group of chefs and friends we learned new skills, techniques and methods of preparing a delicious 3 course meal each day. We also spent a lovely day in the Champagne region tasting and learning about the grapes and techniques of making French Champagne. Everything about the week was well done and as promised. Thank you for a very special and memorable week in Paris!

How to describe a perfectly organized and perfectly executed week building memories to last a lifetime. The attention to even the smallest detail made for a week of learning, feasting, sightseeing one to go down as our favorite trip ever. I asked my prior non cooking husband what he thought of the class about mid way through and he replied, “wonderful”! We are now home and he has a new interest and appreciation for all that happens in the kitchen. The staff was outstanding. Antonin, Fred and “French” Karen were simply the best. Each one in their own way were there for us every step of the way. They shared their expertise fully with wit, charm and always a smile. They worked hard and it was much appreciated by each of us who were lucky enough to have this week together in Uzes. The accommodations were not only gorgeous, but comfortable and fit the size of the class well. From day one the class became a unit. Prepping the food, chopping, dicing, peeling, deboning, stirring, tasting….. Yum….. Going to the markets and learning from our wise leaders, then home to “cook”. Outstanding!!!! We each remarked that there was a well thought out balance between marketing, cooking and fun excursions, the carriage ride and picnic topping it all. What could you do better? Nothing! A perfect finale to our 10 day stay in Paris. We met Chef Mathieu along with 3 other couples and proceeded to the area of the markets 2 blocks away. Via discussion with the group we came up with the menu we would prepare for lunch. He took us to each shop (fish, meat, produce, bread and cheese), all within steps of each other, to purchase the ingredients. Then a short walk to the school to begin our preparation. After a demonstration of proper technique for each, it was up to us to get the fish, meat and produce ready for cooking. Everything was hands on and after an hour or so it was time to taste this wonderful meal. Chef Mathieu was an excellent instructor and this was the perfect way to spend the morning before our afternoon flight home.

The week in Uzes was priceless and exceeded my expectations, a Tour de Force as far as what I learned and un-learned in techniques and skills in the kitchen. Chef Eric's unique ability to teach and to forge relationships from farm to market and from kitchen to table was exemplary. We learned, cooked, shared laughed, drank, ate and ate some more! Chef Eric Fraudeau and his staff were flexible and accommodating to our individual needs. The venue was lovely and relaxing, and each day was leisurely paced representing the Provencal heart of life!

But, the picnic day was probably the day when the veil parted and the dream world and the world of consensual reality blurred. A horse carriage ride to a secret dell and a picnic bar none. I highly recommend the macaron class to anyone looking for a fun experience in Paris - whether you have an interest in baking or not. During our recent visit to Paris, my daughter and I participated in the Macaron Class. Chef Sarah led our class, with the assistance of her sous-chef Isabella. Chef Sarah’s exuberant energy and enthusiasm made learning the intricacies of macaron baking both fun and easy. As she taught, she masterfully wove both her personal experiences and professional knowledge into an easily understood narrative that made learning from her an absolute joy – plus we got to eat/keep the fruits of our labor at the end. As chef Sarah taught, Isabella worked in the background, producing bowls of ingredients as if by magic, spreading and covering the filling to flash chill, and likely countless other things that I didn’t even notice – allowing us to focus on making macarons. All of the dirty dishes seemed to disappear into thin air, as the dishwasher would sneak into the back of class to collect dishes from the “dirty bin” – everything ran smoothly and efficiently. Although the ingredients were staged for the class, we performed all of the sifting, mixing, baking, cooking, and final assembly of the macarons. Chef Sarah did make it clear that making macarons at home would be a more time-consuming process, as we would likely not have access to some of the same equipment/resources as a professional chef. As an example, we used a flash chiller to cool the fillings during the class – something that we would likely need to use a regular refrigerator for at home. We also didn’t have to do any of the dishes, so that’s an extra bonus! I honestly don’t think I could recommend this class enough, and I would love to take another class!
